Forgotten Cookies

These little meringue cookies are perfect for the holidays and special occasions.  A couple of drops of food coloring can be added to the batter for a festive touch.  For the chocolate lovers, add 1 tablespoon of cocoa powder.

There are lots of variations on this simple little cookie.  One of my favorite is the Forgotten Christmas cookie.  To make these minty meringues, add 2 crushed peppermint candy canes and 1/4 teaspoon cream of tarter to keep the cookies crisp, or substitute 1 cup of mint chocolate chips for the semi-sweet.  The recipe makes 1 1/2 to 2 dozen small cookies.
  


Ingredients ~
2 egg whites (or pasteurized egg whites)
3/4 cup sugar
1 cup semi-sweet chocolate chips
1/2 teaspoon vanilla

(Optional)
1/2 cup chopped pecans


Directions ~
Preheat oven to 350 degrees
Cover cookie sheet with parchment paper 

In a large mixing bowl, beat egg whites until stiff
Gradually add sugar
Fold in chocolate chips (and chopped pecans)
Drop by teaspoon onto lined cookie sheet
Place cookies in oven and turn oven off
Leave for 4 hours or overnight




Cookies will be light and crisp when you remove them from the oven!
