Loaded Potato Salad

A great potato salad served chilled for those summer cookouts and picnics.  My recipe is a spinoff from the loaded baked potato. . .and a welcomed companion to the Bubbly Baked Beans.


Ingredients ~
1 bag yukon gold potatoes, washed and cubed
1 medium sweet onion, chopped
1 cup mayonnaise
1/4 cup lite sour cream
1 tablespoon deli mustard
1/4 cup wickles relish
1/2 teaspoon ground pepper and salt
1 8 oz pkg 2% cheddar cheese, shredded
1 small pkg real bacon pieces

Directions ~
In a large pot, add water, salt and potatoes
Boil potatoes until tender, but still firm
Drain water and set pot aside
In a small bowl, mix together mayo, sour cream, and mustard
Add relish and onion, and stir until blended
Add the creamy mixture to pot of potatoes, and lightly fold until well coated
Transfer into large serving bowl
Sprinkle with ground pepper, shredded cheese and bacon

Refrigerate until ready to enjoy.
