This recipe is easy to make and doesn't take a lot of time in the kitchen. It is also my favorite scramble for a Sunday morning brunch.
Ingredients ~
2 tablespoons olive oil
4 small yukon gold potatoes, chopped
1/2 pkg frozen turkey sausage links
1 sweet onion, sliced
1 large red pepper, sliced
1 large green pepper, sliced
1 teaspoon crushed red pepper
1 teaspoon ground black pepper
1/2 cup shredded cheddar cheese
Directions ~
In a large saute pan, heat oil over medium to medium-high heat
Add chopped potatoes and cook until slightly soft
In the microwave, slightly thaw sausage for 10 to 15 seconds
Slice sausage into 1/2 inch circles
Add onion, peppers, and sausage to saute pan
Sprinkle with red and black pepper
Cook until lightly brown
Sprinkle with grated cheese
Enjoy with your favorite eggs and jellied toast!
Serves 3-4
