My mom passed away in February 1992 from cancer of the esophagus, but she left behind wonderful memories of the love and laughter that we shared. . .and the recipe for her famous Pound Cake.
Ingredients ~
1/2 pound unsalted butter, room temperature
3 cups sugar
3 cups cake flour
6 large eggs
1 cup whipping cream
2 teaspoons vanilla
Preheat oven to 325 degrees
In a large mixing bowl, cream butter and sugar
Add eggs, one at a time
Then add the flour by the cup, blending between each one
Pour in whipping cream
Mix well, but do not over mix
Pour batter into a greased and floured cake pan
Bake for 1 hour
Do the toothpick test before removing cake from oven
If toothpick is clean, cake is ready
Place plate on top of cake pan
Turn upside down and let cool
Remove cake pan
Enjoy by itself or add sliced strawberries and cool whip for an added treat.
Just a hint ~ we always snuck a piece while it was still warm!
