Wedding Cookies

This is one of my favorite cookie recipes.  It's kind of a twist between a butter cookie and a pecan sandy.  .  . Hope you enjoy!






Ingredients ~
2 sticks unsalted butter, room temperature
1/4 cup confectioner's sugar
1/4 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon lemon extract
1 3/4 cup unbleached all purpose flour
1 cup coarsely chopped pecans

Directions ~
Preheat your oven to 300 degrees
Cream butter and sugar on low until nice and smooth
Beat in vanilla and gradually add your flour
Stir in chopped pecans

Scoop out small cookie scoops of dough and place on baking sheets
Bake for 30 to 35 minutes until cookies are just lightly brown on the edges
Cool cookies on a cooling rack or parchment paper
Sprinkle with confectioner's sugar to coat and it's time to taste!

Makes 2 dozen
